Concentration of cultured (acidified) milk
Purpose
Sterilise skimmed milk to increase shelf life and remove all heat-resistant bacteria.
Solution
Cold sterilisation with Isoflux membranes with a pore size of 1.4 µm is the perfect answer to this challenge. The membranes split the skimmed milk into two parts:
- a retentate (about one twentieth of the original volume) containing the bacteria and most of the original fat
- a permeate that is free of bacteria but contains the milk proteins. This fraction represents 95% of the original milk volume. The goal of extracting the bacteria is very well achieved
