Improvement of protein yield in the production of protein concentrates

Solution

Inside Céram™ ceramic membranes concentrate milk to obtain liquid protein concentrate containing the majority of milk proteins.
Filtration yields:

  • a permeate containing water, salts and lactose
  • a concentrate containing various proteins, including whey proteins that are normally lost during cheese production
