Clarification of must
Purpose
The aim of microfiltration is to clarify the must before fermentation in order to improve the winemaking process. The crossflow filtration system uses Inside Céram™.
Solution
During treatment, the product is split into two phases:
- a filtrate free from suspended solids; turbidity < 1 NTU
- a concentrate containing approximately 98% of suspended solids; turbidity > 1000 NTU
