Apple juice

Purpose

Simplification of the traditional apple juice clarification process.

Solution

Inside Céram™ micro- or ultrafiltration ceramic membranes allow apple juice to be clarified by replacing the traditional coagulation and dead-end filtration steps.

Filtration divides the juice into two parts:

  • a clear juice (the permeate) for bottling or concentration
  • a retentate with less than 3% of the original volume

Benefits

  • Increased clarification yield (97% with this process compared with 90% using the traditional method)
  • Elimination of the traditional dead-end filtration unit
  • Reduced consumption of process materials (enzymes, diatomaceous earth and cellulose plates)
