Residual beer
Purpose
The aim of microfiltration is to clarify the residual beer that settles at the bottom of tanks and to add it to the conventionally filtered beer (recovering 2–5%), without causing any significant change in analytical or organoleptic properties.
Solution
The crossflow filtration system uses Inside Céram™ microfiltration ceramic membranes.
During treatment, the product is split into two phases:
- a filtrate, which is clarified beer
- a concentrate containing 20–24% dry extract
